  • 3 ripe avocados
  • 1/2 cup red onion, diced
  • 2 plum tomatoes, diced
  • 1 tsp fresh garlic, minced fine
  • 3 tbsp fresh cilantro, chopped
  • 1/2 lemon, juiced
  • 1/2 lime, juiced
  • add salt and pepper to taste


  1. Cut avocados in half, remove pit.  Scoop avocado into bowl.  Mash the avocado with a fork, leaving some chunks.

  2. Dice the red onion and plum tomatoes, add to the avocado.

  3. Add minced garlic and cilantro.  Slowly add lemon and lime juice to desired taste. (You may not use it all)   Salt and pepper to taste.

  4. Mix gently, remember to leave chunks of avocado for a nice texture.  Top with goat cheese (optional).   Garnish with cilantro and diced tomatoes.

  5. Serve with your favorite tortilla chips.  

*Optional Ingredients for added flavor
: crumbled goat cheese
, crumbled feta cheese or 
sriracha sauce.
