Rainbow White Chocolate Mousse Parfait
Ingredients
- 12 ounces white chocolate chopped
- 2 1/2 cups heavy cream divided
- 2 Tbsp sugar
- Sprinkles *optional
Instructions

Place chopped chocolate in a medium size bowl. Set aside.

In a small saucepan, heat 3/4 cup of the cream on medium heat. The cream should get hot and slightly bubbly on the edges, but do not bring to a boil.

Remove cream from heat and pour over chocolate. Let sit for 2-3 minutes until chocolate melts. Stir until combined.

Set aside and let cool.

Whip ¾ cup of heavy cream until soft peaks form.

Once mousse has cooled fold thewhipped cream gently into chocolate mixture.

Divide the chocolate mousse into 4 different bowls. Add a few drops of your choice of food coloring to each bowl. Gently fold in color. Do not over beat.

Put each color into a piping bag and begin to layer your serving bowls one color at a time.

Refrigerate.

Prepare whip cream topping. In a mixing bowl add remaining heavy cream and sugar. Beat until soft peaks form.

Garnish top of parfaits with whip cream and sprinkles.

Refrigerate at least 3-4 hours before serving. This recipe can be made the night before.
